It's really just a saucy grilled cheese, but there is pepperoni, SO IT IS WHAT IT IS 🍕 Skip the tomato soup for this one bro.
Ingredients:
- Bread of choice, mine is homemade white bread - recipe in Danni's (take on) White Loaf Bread
- sliced pepperoni
- shredded colby jack cheese
- tomato sauce
- tomato paste
- minced garlic (lots, whatever that is)
- Italian seasoning
- garlic powder
- salt and pepper
- onion powder
- olive oil
- red pepper flakes
- butter for cooking and spreading
Directions:
- In saucepan add tomato sauce, tomato paste, seasonings, minced garlic and 1 tbs of olive oil. Mix and heat on low-medium for 5 minutes. Turn it off once it is done.
- Slice bread, I find thicker slices is better, and I have no reason behind it. 2 pieces per sandwich. Butter one side of each piece of bread.
- In a skillet add 1 tbs butter to start, heat on medium-low. HEAT before putting bread in. Add the buttered side to the skillet.
- Now quickly but smoothly add a layer of marinara sauce (not a ton, it's going on both pieces of bread), add cheese, pepperoni slices and some more cheese to ensure stickage.
- Take another piece of buttered bread, add marinara to non-buttered side and press onto pizza creation. Make them really hug each other, know what I'm saying.
- Cook until gooey, about 2 minutes each side.
TIP #1: If you have extra cheese and pepperoni, throw some on top and broil them in the oven for a few minutes.
TIP #2: If you have extra sauce, add a bit of water to it and reheat it for dipping sauce. DUH!
