Danni's Stuffed Meatballs

Meatballs? Sure. Stuffed Meatballs? Absofuckinglutely. 

Ingredients:

  • 1 lb ground beef (makes about 8 meatballs)
  • Italian Style breadcrumbs
  • 1 egg
  • squirts of ketchup & mustard 
  • shredded mozzarella 
  • salt, pepper, garlic powder, onion powder, minced onion seasoning, paprika, parsley, Italian seasoning and cumin

Directions:

  1. Preheat oven to 350 degrees.
  2. In large mixing bowl, combine ground beef, seasonings, 3/4 cup breadcrumbs, egg, squirt of ketchup and mustard. Mix well.
  3. Grease a muffin tin and set aside while forming meatballs.
  4. Grab a chunk of meat and form a flat cup in your hand. Add shredded mozzarella and fold up and ROLL into a ball. Cheese can be poking out, no big deal.
  5. Place each meatball in a muffin cup and squirt ketchup on top, not a lot. 
  6. Bake for 15 minutes and then flip over, using a spoon or fork and bake for another 15 minutes.
  7. Add a quirt of ketchup after done and broil for 1-2 minutes.
  8. Remove from oven and muffin tin and enjoy.
