Here is another delicious idea for disposing of those ripe bananas.
Ingredients:
- 2 cups flour
- 2 ripe bananas
- 1 tsp. baking soda
- 1/2 cup butter softened
- 1 tbs. corn starch
- 1 tsp. salt
- 1 cup brown sugar
- 1/2 cup white sugar
- 2 tsp. vanilla extract
- 1 1/2 cups chocolate chips
Directions:
- Whisk together the flour, salt, corn starch and baking soda in a medium bowl.
- In separate bowl, cream together the butter, sugars and mashed bananas until light and fluffy. Beat in vanilla extract.
- Stir in flour just until combined and then add chocolate chips and stir.
- Refrigerate dough for 30 minutes.
- Preheat oven to 375 degrees. Use a silicone mat on a baking sheet, use a big spoon and scoop dough (about 2 tbs) onto baking sheet.
- Bake cookies for 9 - 10 minutes, until light golden brown.
- Let cookies completely cool on baking sheet.
