Danni's Banana Chocolate Chip Cookies

Here is another delicious idea for disposing of those ripe bananas.

Ingredients:

  • 2 cups flour
  • 2 ripe bananas
  • 1 tsp. baking soda
  • 1/2 cup butter softened
  • 1 tbs. corn starch
  • 1 tsp. salt
  • 1 cup brown sugar
  • 1/2 cup white sugar
  • 2 tsp. vanilla extract
  • 1 1/2 cups chocolate chips

Directions:

  1. Whisk together the flour, salt, corn starch and baking soda in a medium bowl.
  2. In separate bowl, cream together the butter, sugars and mashed bananas until light and fluffy. Beat in vanilla extract.
  3. Stir in flour just until combined and then add chocolate chips and stir.
  4. Refrigerate dough for 30 minutes.
  5. Preheat oven to 375 degrees. Use a silicone mat on a baking sheet, use a big spoon and scoop dough (about 2 tbs) onto baking sheet.
  6. Bake cookies for 9 - 10 minutes, until light golden brown.
  7. Let cookies completely cool on baking sheet.
