You can have this for breakfast or dinner, I won't judge you.
Ingredients:
- 1.5 lbs. Chicken breast
- 1 cup whole milk
- pickle juice
- 1 egg
- paprika, seasoning salt, cayenne pepper, garlic powder, onion powder, black pepper
- 2 cups flour
- 3/4 cup cornstarch
- oil for frying
- a Waffle Mix & Syrup, or Hot Honey
Directions:
- Rinse/clean chicken, cut off gross pieces and set aside.
- Mix whole milk, SPLASH of pickle juice, egg & seasonings (that you're going to measure with your heart). Stir together well, add chicken to liquid mix and set aside for at least 30 minutes.
- In large bowl mix together flour, cornstarch, AND SAME SEASONINGS.
- You can either get the waffles done and keep them warm in the oven or cook them simultaneously. (I cook half and then start the chicken)
- Add oil to a deep skillet for frying the chicken. GET HOT. The oil, you already are.
- Take one piece of chicken at a time, let drip and then place in flour mix, coating well and then into HOT oil.
- Cook on each side until completely done.
- Set chicken on a paper towel or rack to drain excess oil.
- Waffles down first, a bit of syrup or honey, then fried chicken and finally more syrup.
Get a knife & fork to enjoy this messy dinner. 🍴
