Danni's Quick French Dip

Tired after grocery shopping? Me too. Get the ingredients for this fast lunch or dinner while you're there! 

Ingredients: 1 French Loaf, 1 package of ANY Roast Beef deli/lunch meat, 1 package (12) of sliced cheese (Gouda, Swiss or Muenster cheese is the best for this), 1 can Beef Consommé, 1 can of French Onion soup, 1 yellow onion, 1 bunch of mushrooms, Mayonnaise, oil for sautéing, salt & pepper

 

Directions:

1. Preheat oven to 350'.

2. Prep onion and mushrooms for slicing, slice, add 1-2 tbs of oil to a pan for sautéing vegetables. Add onion first, cook for two minutes on medium, then add mushrooms and cook while stirring for remainder of time, from medium to low towards the end.

3. Add both cans to a saucepan, stir and turn on low. Add Roast Beef to the soupy mixture and simmer. DO NOT OVER COOK. 

4. Slice the French Bread down the middle (long ways), press into the bread on the inside and/or remove some of the bread, (do this so it will sandwich better), add mayo if you desire, then add 6 slices of cheese to EACH half of bread. Place in oven for about 7 minutes or until cheese is melted.

5. Remove Roast Beef from the homemade Au Jus before bread is done in the oven, place on plate, leave Au Jus on low.

6. Remove bread from oven and place onto a cutting board. TO THE BOTTOM HALF, add Roast beef first, then add sautéed vegetables. Add top half and sandwich. 

7. Slice into about 6 huge slices, serve on plate with a side bowl of Au Jus. 

8. Dip & enjoy a few.
