Danni's Stuffed Bell Peppers

You're allowed to use any large bell pepper for this recipe EXCEPT the green ones. Yuck. Okay, carry on. 

Ingredients:

  • 8 LARGE bell peppers; orange, red or yellow
  • 1 lb ground beef
  • 2 cups minute rice
  • minced garlic
  • 1 shredded carrot
  • 2 minced zucchini
  • minced mushrooms
  • can of petite diced tomatoes with juice
  • minced white onion
  • garlic powder, salt, pepper, onion powder

Directions:

  1. Prep the bell peppers by cutting into the top of the bell pepper like you're carving a pumpkin, remove the top/lid/hat and remove the inside seeds. Set aside in baking dish standing up. Duh. 
  2. In large bowl add your ingredients together with the ground beef and rice at the end. (Uncooked btw). Once rice is added, add the ground beef and crumble it into the bowl first, it will help get into everywhere. Mix like crazy with your hands, put that fucking spoon down.
  3. Preheat oven to 375 degrees.
  4. Now take each bell pepper and stuff it with the meat mixture like a thanksgiving turkey. 
  5. Once stuffed, place little pepper top back on for security and bake for 1 hour and 15-30 minutes.
  6. Remove from oven and pan, slice and devour.
