This is everyone's favorite over here, maybe yours too.
Ingredients:
- 2 lbs chicken breasts (cubed)
- 1/4 cup cornstarch
- 1 cup flour
- garlic powder, onion powder, paprika, salt and pepper
- oil for frying
- 1-2 cups quinoa (cooked as directed)
- 1 cup soy sauce
- 1 cup water
- 1/2 cup sugar
- minced garlic (lots)
- 7 jalapenos (sliced)
Directions:
- Mix together cornstarch, flour, garlic powder, onion powder, paprika, salt and pepper in a medium sized bowl.
- To a deep skillet add canola oil, enough for frying. Heat skillet to medium heat.
- Toss chicken in flour mixture and add to pan when hot.
- Make the quinoa in a saucepan and set aside when done.
- In another saucepan, (big enough to add the cooked chicken too), add soy sauce, sugar, water and minced garlic. Bring to a boil until sugar dissolves then turn off.
- Once all the chicken is cooked and drained on a paper towel, slice jalapenos and add to hot oil and add the chicken back in. Cook for a few minutes longer, until the jalapenos are tender.
- Remove from oil and place in the sauce, toss.
- Fluff the quinoa.
- Plate with quinoa on first and then the chicken and jalapeños. Add some extra sauce too!
