Danni's (Take) Costco Chicken Bake

I've had this once and decided I need to know how to make it. So I did.

Ingredients:

  • 2 Chicken breasts; cooked and shredded
  • 12 oz bacon, cooked crisp and crumbled
  • Italian blend cheese, (mozzarella, parmesan, provolone)
  • shredded Parmesan (for topping the bread)
  • Ceasar dressing
  • 3 1/2 cups flour
  • 1 1/4 cup warm water
  • 2 1/4 tsp. active yeast
  • 2 tbs. olive oil
  • 1 1/2 tsp. salt
  • 1 tsp. dried oregano
  • 1/2 tsp. garlic powder
  • 1 tbs. sugar

Directions:

  1. I cooked the chicken and bacon first. I seasoned both sides of the chicken with garlic salt, onion powder, garlic powder, pepper, paprika and cumin. I baked the chicken for 40-45 minutes and then shredded it. Bacon, crispy and crumbled.
  2. Mix water, sugar and yeast. Let sit until frothy, about 7 minutes.
  3. Add in flour, salt, oregano, garlic powder and olive oil. Knead or mix until smooth. Cover and let it rise for an hour or until doubled in size.
  4. Before cutting dough, get meat mixture ready. Add the crumbled bacon to the cooked chicken and mix. Add in some Italian cheese and a few good squirts of dressing and mix again.
  5. Now, uncover dough, punch it down once and split into three equal parts. Roll each one into a large rectangle.
  6. Onto the flattened dough, add chicken & bacon mix, spread evenly in a line, add a good amount of cheese and then add Ceasar dressing over the cheese.
  7. Fold up one side, then tuck in both ends and fold over the other side nice and tight. Pinch seems together.
  8. On a grease baking sheet, place the rolled masterpiece on it, seem side down.
  9. In a small bowl add Ceasar dressing and a bit of water, stir until blended well. Brush on the tops of bread. Add more parmesan cheese to the top.
  10. Bake in oven at 400 degrees for 20-22 minutes.
  11. Remove from oven and brush melted butter, parsley and parmesan on top.
