Danni's Wannabe Italian Salad

You can add some cooked bow- tie or rigatoni noodles to the bowl also.

Ingredients:

  • Grape tomatoes, halved
  • Fresh mozzarella balls (preferably in herbs & oil), kept whole or halved
  • Artichoke hearts, chopped or sliced
  • Black olives, whole or halved
  • Banana peppers (optional)
  • pepperoni (optional), halved
  • Balsamic vinegar or dressing
  • salt & pepper

Directions:

  1. If everything is prepped, this is a dump and set in the fridge for an hour or two salad recipe.
  2. In large bowl, add all ingredients (minus Balsamic & reserved herbs & oil from the mozzarella) and combine together
  3. Add a few big squirts of the Balsamic vinegar and about 2 tablespoons of the herb oil. Combine well.
  4. Add salt and pepper to taste.
  5. Cover and set in the refrigerator to marinate and chill for at least an hour.
  6. Uncover, toss and serve.
