You can add some cooked bow- tie or rigatoni noodles to the bowl also.
Ingredients:
- Grape tomatoes, halved
- Fresh mozzarella balls (preferably in herbs & oil), kept whole or halved
- Artichoke hearts, chopped or sliced
- Black olives, whole or halved
- Banana peppers (optional)
- pepperoni (optional), halved
- Balsamic vinegar or dressing
- salt & pepper
Directions:
- If everything is prepped, this is a dump and set in the fridge for an hour or two salad recipe.
- In large bowl, add all ingredients (minus Balsamic & reserved herbs & oil from the mozzarella) and combine together
- Add a few big squirts of the Balsamic vinegar and about 2 tablespoons of the herb oil. Combine well.
- Add salt and pepper to taste.
- Cover and set in the refrigerator to marinate and chill for at least an hour.
- Uncover, toss and serve.
