Macaroni salad is superior to potato salad. It just is.
Ingredients:
- 1 lb. Ditalini pasta
- 1 lb. cheddar cheese cubed
- 1/2 - 1 cup of diced Dill pickles
- 1/2 - 1 cup sliced black olives
- Mayo
- Mustard
- Pickle juice
- Salt, black pepper, garlic powder, onion powder, paprika
Directions:
- Boil pasta in salted water until done.
- Drain the pasta and add to a BIG bowl. Chill in the fridge for at least 30 minutes.
- In small bowl, add a few scoops (big spoon) of Mayo, a few squirts of Mustard, (less than the Mayo), a splash of pickle juice and the seasonings. Mix well and taste to adjust.
- Once noodles have cooled down some, add the sauce first and stir well to combine.
- Add the cheese, pickles and olives. Mix well. Everything should be coated with the sauce now.
- Season with salt and pepper.
