Chewy and just the right amount of sugar, Sugar.
Ingredients:
- 1 1/2 cups flour
- 3 1/4 cups quick oats
- 1 tsp. Cinnamon
- 1 cup softened butter
- 2 large eggs
- 1 tsp. salt
- 1 tsp. baking soda
- 1 1/2 cup packed brown sugar
- 1 tsp. vanilla extract
- 1 cup Mix-ins (optional)
Directions:
- In a medium bowl whisk cinnamon, salt, baking soda and flour. Set aside.
- Cream together butter and sugar in a bowl until smooth. Mix in eggs and vanilla extract, mix until smooth again.
- Mix in dry ingredients (flour, etc. not oats). Mix until smooth. Add oats and mix. If adding mix-ins, do so.
- Scoop 1-2 tbs sized balls of dough and place on cookie sheet (or parchment paper). Let chill in the refrigerator for at least 30 minutes.
- Preheat oven to 350 degrees. Place cookie dough balls a silicone mat on a baking sheet (or whatever).
- Bake for 10-12 minutes, until bottom is golden. Cool on cookie sheet for 5 minutes and then place on a wire rack to cool completely.
