Danni's French Onion Soup (Instant Pot)

This is one of my favorite soups now, the Instant Pot is my favorite now too. Get you one and try this out!

Ingredients:

  • 1 tbs olive oil
  • 4 cups thinly sliced yellow onions
  • 1 tbs butter
  • 1/2 thyme
  • 1/2 cup dry red wine
  • 4 cups beef broth
  • 1 tsp. Worcestershire sauce
  • 1 tbs. brown sugar
  • 1/2 tsp. pepper
  • slices of French Bread
  • Shredded Swiss cheese 
  • 1/4 cup shredded Parmesan cheese 

Directions:

  1. Prep all your ingredients. Trust me.
  2. Turn Instant Pot on to 'SAUTE', normal heat. Add oil and let heat briefly. Add onions and sauté until break down and caramelize, stirring occasionally. About 10 minutes. Add in butter and thyme, sauté for another minute.
  3. Add in red wine, allow to sauté for 1 -2 minutes, while stirring and scraping any bits off the bottom. Turn off by hitting CANCEL. 
  4. Add in the beef broth, Worcestershire sauce, pepper and brown sugar. Stir.
  5. Place the lid on, BE SURE THE VENT KNOB IS CLOSED. Set cook time for 20 minutes on HIGH PRESSURE. Pressure Cooker button, using the =/-.
  6. Once time has elapsed, let the pressure release naturally for 15 minutes,
  7. Prepare your cheesy bread for topping. Preheat broiler. 
  8. Place sliced bread on baking sheet and broil each side for 2 minutes.
  9. Remove from oven and top with shredded Swiss cheese and parmesan cheese. Broil until the cheese has melted.
  10. NOW, ladle the soup into bowls and also top with some shredded Swiss cheese. Add 2 slices of cheesy French bread to the top of the soup bowls.
  11. Eat immediately and obviously get seconds.
