Another perfect bread recipe, I have the proof. This one is from Homemade French Bread - The Carefree Kitchen
Ingredients:
- 5 1/2 - 6 cups flour
- 2 1/2 cup warm water
- 2 tbs. sugar
- 3/4 tbs. salt
- 2 tbs. olive oil
- 1 tbs. yeast
- 1 egg + 1 tbs water for egg wash
Directions:
- In a large bowl, add warm water, sugar and yeast. Stir and let rest until frothy.
- Add the oil, salt and HALF the flour. Mix fast and well until all flour is mixed in. Continue to mix and add the rest of the flour until the dough starts to pull away. (I think I used exactly 5 1/2 cups). If dough is too sticky add a bit more flour until no longer sticky but still soft.
- Cover bowl with towel and let rest for 15 minutes.
- Spray a large baking sheet(s) with non-stick spray.
- Once rested remove dough from bowl onto a lightly floured surface. Cut into 2 equal pieces.
- Gently roll each into a rectangle, 14' x 8' with a rolling pin. Roll up each rectangle starting with the long end and tuck in the ends.
- Carefully place on baking sheet(s), seam side down. Cover with kitchen towel and let rest for 30 - 40 minutes, dough should be doubled in size.
- Preheat oven 375 degrees.
- Make egg wash by whisking together 1 egg and 1 tbs of water.
- Once bread has doubled, brush egg wash all over the loaves. Be sure to get all the sides.
- Score each loaf with a razor blade by making 4 angled slashes on the top.
- Put the baking sheet in the HOT oven and place 5 ice cubes in the oven bottom to create a good crust.
- Bake for 20 - 25 minutes, until golden brown and baked through.
- Let cool before slicing.
