Crockpot meals are life savers in the summertime, especially this one.
Ingredients:
- Boneless chicken breasts 2 lbs
- 1/2 c. diced onion
- garlic cloves minced
- 1/2 c. honey
- 1/4 c. ketchup
- 1/2 c. soy sauce
- 2 tbs olive oil
- 1/4 tsp red pepper flakes
- 4 tsp cornstarch
- 1/3 c. water
- salt & pepper
Directions:
- Place chicken in lightly greased crockpot. Season lightly both sides of the chicken with salt and pepper.
- In bowl combine the onion, garlic, honey, ketchup, soy sauce, oil and pepper flakes. Mix well.
- Pour over chicken and cover. Cook for low for 4 hours.
- Shred chicken and set aside.
- In a small bowl dissolve cornstarch in 1/3 cup of water. Add to crockpot, stir to combine with sauce.
- Cover and cook for 10 minutes.
- This can be made into sandwiches or scooped over some rice.
