Danni's Pizza Pillows

The name is self-explanatory, I think. Big, soft pizza things.

Ingredients:

  • 1 batch of Garlic Rolls (find in Garlic Rolls (Danni's Take)
  • pepperoni 
  • shredded cheddar cheese (and mozzarella if you'd like)
  • minced garlic
  • tomato sauce (10.5oz)
  • tomato paste 3 tbs
  • Italian seasoning, garlic powder, onion powder, red pepper flakes, salt & pepper
  • Olive oil

Directions:

  1. Prepare the roll recipe up until the first hour of rising. Do the next step before making into rolls.
  2. Cut pepperoni slices into halves and prepare cheese if not already shredded. Be sure to reserve some of both for topping.
  3. Now, take risen dough and gently but not super gently, punch a hole in the middle to relieve any air bubbles. Flip out onto a cutting board and cut the dough in half. Then cut the halves into 6 equal sized wedges. 
  4. Grease a casserole dish 8x8 works but I would prefer a 9x13, (mine had cake in it 😂).
  5. Take one dough wedge in your palm and flatten it just a little to make it easier to fill. 
  6. DON'T add a bunch of either, it will be topped with cheese and pepperoni too. Chill. 
  7. Add shredded cheese and some pepperoni. Take the sides and fold them over and pinch them closed. Gently but firmly roll it into a ball, it basically is one already.
  8. Add each roll to the dish and set aside while making the sauce. (You can make the sauce ahead too, of course).
  9. To a saucepan add tomato sauce, tomato paste, minced/chopped garlic, seasonings and 1 tbs olive oil. Mix well and heat on low-medium. Simmer for 2-3 minutes. Once done, let cool entirely.
  10. Once cooled add reserved pepperoni and cheese and mix. OR KEEP SEPARATE & ADD AFTER LAYING THE SAUCE ON THE ROLLS.
  11. Gently place and spread the sauce over the rolls. Cover lightly with plastic wrap and place in warm spot rise 45 minutes to 1 hour.
  12. Once ready to cook, preheat oven to 350 degrees and cook for 35-40 minutes.
