Danni's Cinnamon/Bacon Cinnamon Rolls

These can either have bacon rolled up in them or not. Either way you should be eating these.

Ingredients for Rolls:

  • 1/2 cup warm milk
  • 2 tbs warm water
  • 1 1/2 tsp vanilla extract
  • 1/4 cup butter (room temperature)
  • 1 egg (beaten)
  • 1/4 tsp salt
  • 1/2 cup sugar
  • 3 cups + 2 T flour
  • 1 packet dry active yeast
  • 12 oz Bacon

Ingredients for Cinnamon Filling:

  • 1/4 cup butter softened 
  • 1/2 cup firmly packed brown sugar (light or dark)
  • 1 tbs + 1 tsp of cinnamon 

Ingredients for Icing:

  • 1 tbs melted butter
  • 1 cup powdered sugar
  • 2 tsp Milk
  • 1 1/2 tsp vanilla extract

Directions:

  1. Cook bacon in oven on a baking sheet for about 15 minutes. It should be flimsy, so it rolls up better. It will cook the rest of the way while the cinnamon rolls do.
  2. In a large mixing bowl, combine all the ingredients for the rolls, in the order given. Mix well and until a soft dough forms.
  3. Knead with hands on a floured surface for 8 minutes.
  4. Roll out dough to a rectangle shape and size of 15'' x 20''.
  5. Make the cinnamon filling by mixing all ingredients into a smooth paste like. Spread over the rolled-out dough, gently and evenly.
  6. IF YOU DON'T WANT BACON, SKIP THIS! By now, bacon should be out of the oven and drained a bit. Place a strip of bacon wherever you think you should. I lay them down the same way I'm going to roll them up. 
  7. Start with the bottom of the rectangle, roll up the dough into a tight enough log.
  8. With a very sharp knife, cut 1 1/2-inch sections or bigger (just more time to cook 😉).
  9. Place on a greased baking sheet, 1 inch apart.
  10. Bake at 400 degrees for 10-15 minutes, until lightly golden brown.
  11. Make icing by mixing ingredients in a small bowl, mix until smooth.
  12. Take cinnamon rolls out and drizzle icing over them while hot.
