Danni's Cheezy Gritz

Absolutely, a family heirloom. And it's cheesy, just like us.

Ingredients:

  • 1 1/2 cups Quick Grits
  • 6 cups of water
  • 4 eggs
  • 1 stick of butter (8 tbs)
  • 1 lb. of Velveeta

Directions:

  1. Preheat oven 350 degrees.
  2. Cube Velveeta, set aside. Slice butter into squares, set aside. Beat 4 eggs, set aside.
  3. Boil 6 cups of water in a large pot.
  4. Grease a large oven safe bowl and set aside for baking.
  5. Measure out grits and slowly pour in while stirring, once water has started to boil.
  6. *TIP* You are going to NEED to be continually stirring the pot, except when pouring items in, sort of. So have all this stuff ready.
  7.  Once grits have thickened up in the water, add the butter first and stir. 
  8. Keep stirring and once butter is melted, add Velveeta and stir. It's an arm work out, keep stirring though.
  9. Once all is melted, on LOW, SLOWLY add a bit of eggs and stir, repeat until eggs are gone. DO NOT STIR TOO FAST OR EGGS WILL SCRAMBLE.
  10. Stir well for a minute or two with heat off.
  11. Pour into greased bowl and bake for 1 hour.
