Ingredients for Crust:
- 2 sticks butter (cut into pieces & room temp)
- 2 cups all-purpose flour
- 1 cup Powdered sugar
- 1/4 tsp salt
Ingredients for Filling:
- 4 eggs
- 2 cups white sugar
- 6 tbs all-purpose flour
- 6 tbs fresh lemon juice (2 lemons)
Directions:
- Preheat oven to 350 degrees.
- Line a 9x13 baking dish with foil, butter foil.
- Make the crust, whisk together flour, powdered sugar and salt in a large bowl.
- Cut in butter with finger to make a crumbly dough; press into foiled baking dish.
- Bake for 20 minutes, then transfer to cool area.
- Make filling, mix eggs, sugar and flour with a fork. Mix in Lemon juice.
- Pour filling over crust and bake for 25 minutes.
- After, transfer to cooling rack and let it cool completely.
- Sprinkle with powdered sugar, lift out of pan and cut into squares.
