You know it's good when it's dripping, and this is dripping good.
Ingredients:
- Birria & consommé (check previous recipe post for the recipe)
- Corn tortillas
- Mozzarella or Monterey Jack cheese (shredded)
- Cilantro
- White onion (diced)
- lemon or lime wedges
Directions:
- Shred some Birria meat and set aside.
- Heat a skillet (non-stick won't piss you off or wreck your tacos).
- Dip a corn tortilla into Birria consommé (broth), let drip and then place in hot skillet. Cook for 30-60 seconds on one side, flip over and assemble taco.
- Add cheese, Birria, cilantro & onions.
- Fold over & press. Fry for 2-3 minutes on each side for crispiness & to ensure no falling apart. Drain on a rack.
- In a small bowl or cup add some consommé, for dipping the tacos in.
- Top with salsa (optional) & lemon or lime juice.
- Dip & enjoy fckers!
