This will be followed up by Quesabirria Tacos, obviously. Have a seat, it's gonna be a while. Worthwhile.
Ingredients:
- 3.5 lb. Chuck Roast
- 5 Ancho peppers (dried, stems & seeds removed)
- 5 Guajillo peppers (dried, stems & seeds removed)
- 2-3 Chile de Arbol peppers (dried, stems & seeds removed)
- 1 large white onion (chopped)
- 3 large tomatoes (chopped)
- 2 large tomatoes (chopped & roasted)
- 5-7 garlic cloves (chopped)
- 1 tbs Olive Oil
- 4 cups beef broth
- 1 tbs garlic powder
- 1 tbs garlic salt
- 1 tbs onion powder
- 1 tbs Mexican Oregano (crushed Basil leaves)
- 1 tsp ground cinnamon
- 1 tsp cumin
- 1 tsp ground ginger
- 1 tsp ground pepper
- 2 bay leaves
Directions:
- Destem & deseed all peppers, dry roast them in a skillet until the skin changes color.
- Remove from skillet and steep in a large bowl with 6 cups of HOT water until needed.
- In same skillet, add olive oil, 3 chopped tomatoes & chopped onion; cook until softened. Add garlic & cook for one minute.
- Place cooked veggies & garlic into blender & blend.
- Add softened peppers to blender, (RESERVING PEPPER WATER FOR LATER USE). Blend.
- Add seasonings & 1 cup of beef broth to blender, blend until smooth enough. It will be thick.
- YOU DO NOT HAVE TO STRAIN THIS LIKE SO MANY SAY... THE WATER, THE BROTH AND BOILING IS GOING TO MAKE IT A SOUPY BROTH.)
- Anyways, strain if you want. I don't & we all loved it.
- Cut meat into LARGE chunks and evenly so they cook along the same time frame.
- In large bowl, place meat chunks & pour sauce over meat completely. Rub into the meat & marinate in fridge for AT LEAST 2 HOURS.
- After 2 hours, roast the 2 large, chopped tomatoes in the oven at 400 degrees for 10-ish minutes.
- Add meat & marinade to a HUGE pot.
- Add roasted tomatoes, remaining 3 cups of beef broth, 3-5 cups of the reserved pepper water & 3 bay leaves.
- Cover & start on medium until a small boil, then cook on low for 3 1/2 hours, stirring often.
- Meat should be tender and damn near fall apart when shredding.
- If you need it more brothy, add more water.
- TASTE! You may need a little more salt!
Best served as tacos, or with tortillas and huge bowl of this as a soup. Please add cilantro, onions, cheese & salsa to this delicacy. It needs it & so do you.
