Easy 5ish ingredients for this pasta sauce!
Ingredients:
- 3 large zucchinis', roughly chopped
- minced garlic
- salt & pepper
- oil for sautéing
- Box of noodles, your choice 😉
- reserved pasta water or broth
- parmesan cheese
Directions:
- Add oil to a skillet and heat.
- Add chopped zucchini to the skillet, add salt and pepper. Stir and cover.
- Stir every 10 minutes and cover.
- Add garlic at the 20-minute mark.
- Cook pasta al dente, drain and reserve pasta water.
- While stirring zucchini, when soft enough to smush down, do so. This whole zucchini paste process will take almost an hour. It should be complete mush before the noodles are added to the skillet.
- Once zucchini is entirely smashed and looks like a thick paste, add the noodles and give an initial combining stir.
- Add a 1/2 of pasta water and stir again to combine well.
- Cover and simmer for another 7-10 minutes.
- Serve with a topping of parmesan cheese and a slice of bread.
