These could be a side dish, but they should definitely be the entrée.
ingredients:
- 1 box jumbo shells, cooked
- Fresh spinach (a lot), steamed, wilted and squeezed dried
- 15 oz ricotta cheese
- 1 large egg
- basil, oregano
- minced garlic
- 3 cups mozzarella cheese, divided into 2 & 1 cups
- 1 cup parmesan cheese fine shredded
- 3 cups marinara sauce
- salt and pepper
Directions:
- Preheat oven to 375 degrees.
- In medium bowl, mixed together the ricotta cheese and egg, use a fork. Add in basil, oregano and garlic, mix well.
- Add 2 cups mozzarella and parmesan cheese to mixture and combine. Add in spinach, salt and pepper, mix to combine.
- In a 9x13 baking dish, spread a few scoops of marinara sauce on the bottom.
- Use a spoon and scoop the mixture into the jumbo shells. Place in baking dish, with face up.
- Cover shells evenly with the remaining sauce and sprinkle the rest of the mozzarella cheese on top.
- Cover baking dish with foil and bake for 30 minutes.
