I have made tamales a few times, this is how I make my tamale dough.
Ingredients:
- 3 cups Corn Flour
- 1 1/2 - 2 cups Vegetable oil or Canola oil
- 2 1/2 - 4 cups water
- chicken bouillon (1tbs), garlic powder (1/2 tbs), salt (1 1/2 tsp)
Directions:
- Add corn flour and seasonings to a large (huge) mixing bowl. Whisk together.
- Add in 1 1/2 cups of oil to start with. Add 2 1/2 cups of water to start with.
- Mix together with your fingers to combine.
- If it is too dry and crumbly, add another 1/2 cup of both oil and water. Mix again and start mixing well with your hands now. Bring it all together into a nice wet dough. Not super wet, you should be able to keep it together when you grab a small ball of dough and give it a couple squeezes. This dough is not supposed to fall apart. So, if that's what's going on with yours, a bit more water and mix.
- After that, you are ready to make tamales.
